Williston Gets A New Recipe For An Old Favorite; The Burrito!

Located at 1007 Main St. in Williston, this establishment is full of design, design, design. While the name 3 Amigos is intended to tell you this is Southwestern inspired cuisine, it’s also to tell you there are three owners, Cam Holt, Aarron Parker and Mike Triska. There is over 31 years combined restaurant experience among these talented young men.

Amigo, Spanish for friend is exactly what they are. They grew up together in Bismarck, ND. , then migrated to Bozeman after a visit to Triska’s sister caused them to fall in love with the mountains. Putting their business acumen to work, they joined forces co-owning Paulie’s and Frank’s Gourmet Restaurant. In Williston, Triska and Parker will trade places every so often, the first time this summer. “Our focus is to provide a quality family dining experience and go above and beyond what’s expected by others and also what we anticipate when we go out to eat,” he says with enthusiasm. “We are three home state boys looking to help out Williston by adding another outstanding dining experience to the area.”

Their intention for burritos is rather conceptual too. On the board is a base menu. After selecting a style, you walk down the line with your artist and add to its contents with items from a selection full of veggies and sauces and that are made fresh and cut daily. Parker has trained his staff well. Nothing is ever frozen, the bill of fare is extensive, also offering rice and pasta bowls and salads for lunch and gourmet cheese steaks for evening. A plan of opening at 7:00 am for breakfast burritos is coming in the near future.

The design for the interior is Modern Industrial with several tricks hidden behind the walls and under the floor. Specially protected by a hidden barrier and covered by corrugated stainless steel, its purpose for easy cleaning allows the crew to use a power washer every night to make sure it’s extra clean! The upper wall colors were deliberate, especially green, known as a color that makes one hungry. They’ve also incorporated bright red and yellow. “We wanted something that wasn’t plain, but not crazy either,” Holt adds.

Never relying on outsiders, they used their own ideas and expertise to put the restaurant together. In September of last year, Holt, a commercial real estate expert, found the building and immediately recognized that their scouting was over. Knowing they wanted to take part in Williston’s oil boom, once they found it, everything began to fall into place. With furniture purchased in Denver from a restaurant liquidation warehouse, they have a nice atmosphere. In the attached dining room, picture windows lend themselves to bar style seating, allowing customers to watch the bustling traffic go by. Knowing immediately they would take advantage of them, its effect is chill with a cool vibe.
